Ingredients
- 48 cordials, separated
- 2 cups half & half
- 1 cup heavy cream
- 1/8 tsp salt
- 6 egg yolks
How To Make:
Separate the cherry and sauce from the chocolate shell. Chop the chocolate shell and set aside. Pull the fruit out of the cordial sauce and set fruit aside. In a large sauce pan, simmer half and half, heavy cream, salt and the cordial sauce.
Whisk egg yolks, then slowly add approx. 1/3 of the hot cream mixture to the eggs while whisking constantly. Then slowly add the egg yolks back into the remaining hot cream while whisking constantly. Cook on medium heat until the mixture is thick enough to coat the back of a spoon. Remove from heat and allow mixture to come to room temp. Refrigerate at least 4 hours. Churn in ice cream maker according to manufacturer instructions. Once it’s the consistency of soft serve, stir in the reserved cherries and chopped chocolate.
Dip cookies in the soft serve, or scoop onto cookies for sandwiches and freeze for later!
