Ingredients
- 8 large eggs, separated
- 1 cup sugar
- 1/4 teaspoon salt
- 2 cups whole milk
- 2 teaspoons pure vanilla extract
- 2 cups heavy cream
- 4 – 6.6oz boxes of Queen Anne® Black Cherry Cola Cordial Cherries (frozen, roughly chopped)
- 2 cups pecans, roughly chopped
How To Make:
In a medium saucepan, off heat, whisk together egg yolks, sugar and salt until blended. Gradually whisk in whole milk.
Cook egg mixture over medium heat, stirring constantly with a wooden spoon, until custard thickens slightly and evenly coats the back of the spoon (it should hold a line drawn by a utensil); this should take approximately 10 to 12 minutes. Remove custard from heat and gradually mix in the vanilla.
Using 2 metal nesting mixing bowls, place ice cubes in the larger bowl and set the smaller bowl on top of the ice cubes. Place a fine-mesh sieve over the smaller bowl and gradually pour the custard through the sieve to remove any solids. Stir the heavy cream into the custard mixture. Let mixture sit, stirring occasionally, until chilled (approximately 30 minutes).
Pour the custard mixture into your ice cream maker and churn according to your manufacturer’s instructions.
Once the custard starts to harden (approximately 10 to 15 minutes), add the roughly chopped cherries and pecans and continue churning until your ice cream is a soft-serve consistency.
Transfer ice cream into a resealable plastic container and freeze until firm (approximately 2 hours).
